It’s time to indulge, break norms and feast your heart out.
Here are a few recipes to cheer the festive aura. Easy to make and balanced with healthy ingredients.

1. Crusty Peanut Butter Pie

Made a blast out of your meal? This could be an ideal end to it!

You will need:

• 1 2/3 cups digestive biscuit crumbs
• 7 tablespoons coconut sugar or equivalent sweetener of choice
• 2 large egg whites, lightly beaten
• Cooking spray
• 1 1/4 cups milk
• 2/3 cup crunchy peanut butter
• 1/2 teaspoon vanilla
• 1/2 cup cream cheese
• 3 tablespoons finely chopped salted, roasted peanuts
• 1/4 cup shaved milk chocolate


1. Preheat the oven to 350°.
2. Blend the crumbs, 3 tablespoons sugar, and egg whites; mix until moist. Spread the mixture on a 9-inch deep-dish pie plate coated with cooking spray. Use a fork to check before baking. Bake at 350° for 10 minutes. Cool on a wire rack.
3. Pour milk and the remaining 1/4 cup sugar in a heavy saucepan over medium-low heat. Cook for 2 minutes or until sugar dissolves, stirring constantly; transfer mixture to a bowl. Add peanut butter and vanilla, stirring with a whisk until combined. Cover and let it cool for 30 minutes.
4. Place cream cheese in a large bowl, and beat with a mixer at medium speed until light and fluffy. Add milk mixture, beating on low speed until combined. Pour mixture into the already prepared piecrust. Freeze, uncovered for 8 hours or overnight or until hard. Sprinkle with peanuts and shaved chocolate. Refrigerate for 30 minutes before slicing.

2. The Almond Banana Choco Muffin

Need a take away post work or looking to surprise your child in their lunch box before the holidays kick in? Here’s a great recipe!

You will need:
• 3-4 medium bananas
• 3 eggs
• 3 tablespoons coconut oil, melted
• 1 teaspoon vanilla extract
• ⅓ cup (100 grams) almond butter + ¼ cup almond butter, divided
• ⅓ cup (50 grams) coconut flour
• ¾ teaspoon baking soda
• ¾ teaspoon baking powder
• ¼ teaspoon salt
• ½ cup dark chocolate chips

1. Line a muffin tin with paper liners and preheat the oven to 350°
2. In a large bowl or mixer, combine mashed bananas, eggs, coconut oil, vanilla extract and ⅓ cup almond butter.
3. Mix the coconut flour, baking soda, baking powder, and salt to the wet ingredients. Pour in the chocolate chips.
4. Add 1 tablespoon of batter to the bottom of each muffin pan. Add a teaspoon of almond butter to the centre of each muffin. Divide the remaining batter evenly into the muffin cups. Top with more chocolate chunks if desired.
5. Bake in the preheated oven for 20 minutes. Check the same with a toothpick.
6. Remove from oven and set to cool on a wire rack for about ½ hour.

3. Almond Banana Ice-sticks

Tried the cooler version yet? This healthy, delicious and energy powered dessert is sure to do the magic.

You will need:

• 4 bananas
• 3/4 cup almond butter
• ½ cup + 2 tbsp. milk
• 1 tbsp. maple syrup or honey
• ½ teaspoon vanilla extract

1. Put ingredients to blend and puree until smooth and creamy. Taste and adjust sweetness as needed.
2. Pour the batter into 8-10 popsicle molds (will vary depending on the type of mold used) and freeze for at least 6 hours, until solid! Store in a sealed container in the freezer until ready to serve.
