SUMMER GARDEN SALAD WITH VEGAN CASHEW BUTTER DRESSING

Cucumber, sliced round
Tomatoes, coarsely chopped
Romaine Lettuce or greens of choice
Croutons, for garnish
For the dressing :
3 tbsp The Butternut Co Cashew Butter
1 tbsp Apple Cider Vinegar
1 tbsp maple syrup
½ tsp ginger powder
½ tsp cumin powder
- Add all the dressing ingredients to a blender and mix well. Set aside
- In a large salad bowl, add the romaine leaves. Except for the croutons, mix all the remaining ingredients in a separate bowl with 3/4th of the dressing.
- Add the mixed ingredients over the romaine. Pour the remaining dressing and sprinkle the croutons. Do not mix the salad now.
- Serve chilled. Enjoy!
