Yes, (sweet) Potato is a vegetable!
Warm glazed sweet potatoes and a tangy peanut sauce are the stars of this recipe. Comfort food – with a healthy, fiber rich twist – is what we like to call this at the Butternut HQ. The best time to eat this? Our in house nutritionist recommends this as an afternoon meal, with a side of greens or a simple raw salad. Heart, wholesome and so delicious! Ingredients:
- For the peanut sauce
- ¼ cup soy sauce
- 3 tbsp apple cider vinegar
- ½ cup The Butternut Co Peanut Butter, Creamy
- 2 tbsp maple syrup
- 2 tsp grated ginger
- 1 tsp chopped garlic
- Red chili flakes
- 2-3 tbsp water
For the vegetables
- 2 sweet potatoes, chopped into thick chunks
- 1 green capsicum, sliced
- 2 tbsp oil
- 1 tsp cumin (jeera) powder
- Salt, to taste
- Arugula leaves
Method:
- Coat the vegetables with oil, jeera powder and salt. Roast on a hot pan until brown.
- Whisk the sauce ingredients together in a separate bowl.
- In a serving bowl add a base of your choice – we recommend quinoa or barley. Add the vegetables and arugula on top and pour the sauce generously over. Sprinkle some herbs and peanuts.
- Serve warm. Enjoy!
