A batch of fresh Christmas cookies is just what we need to celebrate. These cookies are pure comfort. Dip them into your hot cuppa’ tea or snack on them while watching your favourite Christmas shows.

Ingredients
For the cookies:
1 cup butter, softened
¾ cup brown sugar
¾ cup granulated sugar
1 tsp vanilla extract
1 whole egg + 1 yolk
1 cup The Butternut Co Peanut Butter, Creamy
3 cups wheat flour
1 tbsp vegetable oil
¾ tsp baking soda
¾ tsp salt
For the icing:
1 cup of chocolate chips
3 tbsp coconut oil
1 tsp vanilla extract
METHOD
- For the cupcakes, whip together – butter and both sugars until fluffy. Next add the peanut butter, eggs, vanilla and oil; and mix well.
- In a bowl combine the salt, flour and baking soda. Add this mix to the wet mix and stir until combined.
- Flatten the dough and cut into Christmas shapes with a cookie cutter.
- Bake at 180C for 8-10 minutes or until firm and cooked.
- For the icing, melt the chocolate and coconut oil in a double boiler. Add the vanilla extract and mix well.
