This Rocky Road Fudge is a healthier & decadence take on the traditional Rocky Road Fudge. With lots of nuts and no refined sugar, this is a perfect treat.
8–10 Pitted Medjool Dates
1/3 Cup Cacao Powder
3–4 Tbsp Non-Dairy Milk
1/8 Tsp Salt
1 Cup Chopped Nuts
1. In a blender, blend pitted Medjool dates and chocolate peanut butter at low speed until you have a thick smooth paste. Add the milk slowly trying to add as little as possible.
2. Add the cacao powder and salt. Blend again until combined, stopping to scrape down the sides as needed.
3. Transfer the mixture to a bowl. Add the nuts and mix.
4. Press the mixture in a lined with parchment paper shallow pan. Refrigerate or freeze overnight until firm.
Slice into squares and enjoy!
