These vegan, gluten-free and oil-free ORANGE CASHEW BUTTER COOKIES are our new favorite treats. They are sweet and buttery, with a nice amount of tang from the orange.
1 Cup Almond Flour
1/2 Cup The Butternut Co. Cashew Butter
1/4 Cup Maple Syrup
1 Tsp Vanilla Extract
1 Tbsp Orange Juice
1/2 Tsp Baking Powder
1/2 Cup Cranberries, Finely Chopped
2 Tbsp Fresh Orange Zest, More To Taste
1. In a large mixing bowl, whisk together cashew butter, maple syrup, and vanilla extract. Add orange juice and whisk until smooth.
2. Add almond flour, baking powder, and salt to the bowl and mix with a spatula until a dough forms. Finally, fold in cranberries and orange zest.
3. Preheat your oven to 175C degrees and line a baking sheet with parchment paper Using a cookie scoop, form balls of dough and gently press down into cookie shapes.
4. Bake cookies for about 12 minutes, until edges are golden brown. Allow cooling & serve. Enjoy!
