NO-BAKE PEANUT BUTTER SNOWBALLS

In the holidays we’d love to have a gluten-free, vegan dessert. And these snowballs are exactly that!

Prep time: 45 minutes
Serves 12-14

INGREDIENTS
•3/4 cups The Butternut Co. Unsweetened Peanut Butter Creamy
•1 tsp vanilla extract
•5 tbsp honey or maple syrup 2 tbsp cocoa powder
•1/2 cup oat flour (or grind 1/2 cup oats in a high-speed blender until fine)
•1/2 cup finely shredded unsweetened coconut

METHOD
Whisk together creamy peanut butter, vanilla, and honey/maple syrup in a medium-sized bowl until smooth.
Combine oat flour and cocoa powder with the whisked mixture. Roll medium-sized balls from this mixture and place them on a parchment-lined plate or a baking sheet.
Freeze the balls for 20-30 minutes and roll into perfect balls again. Roll each ball in the finely shredded unsweetened coconut flakes and freeze them until ready to serve.
Serve chilled. Enjoy!
