We baked a batch of good old classic cupcakes to celebrate the weekend! These are moist and fluffy – and will instantly transport you back to childhood days.
You can create flavored cupcakes by switching around the frosting – add in some melted chocolate, strawberry puree or banana essence! Garnish your frosted cupcakes with chocolate chips, chocolate drizzle or toasted chopped nuts.
Try them this weekend – we insist!
MOIST PEANUT BUTTER CUPCAKES
Ingredients
For the cupcakes:
1/3 cup butter, softened
1.5 cups brown sugar
1 egg
3/4 cup The Butternut Co Peanut Butter, Creamy
1 tsp vanilla extract
½ cup milk
2 cups wheat flour
½ tsp salt
½ tsp baking powder
½ tsp baking soda
¼ tsp cinnamon powder
For the frosting:
1/2 cup The Butternut Co Peanut Butter, creamy
2 cups icing sugar
2 tsp maple syrup
1 tsp vanilla extract
3 tbsp milk
METHOD
- For the cupcakes, whip together – peanut butter, butter, and brown sugar until fluffy. Add egg, vanilla and beat well.
- In a bowl, combine the dry ingredients. Add to the wet mix and stir until combined.
- Pour into a muffin tin and bake at 180C for 15-20 mins or until well cooked.
- For the frosting, whip together – peanut butter and sugar until fluffy. Add maple syrup, vanilla and beat well. Add milk to get the desired consistency.
- Frost cupcakes once cooled. Serve fresh. Enjoy!
