This Kale Cranberry Cashew Butter Salad is a wholesome salad filled with the goodness of cranberries and almonds. Tossed in delicious creamy Cashew Butter Mustard Dressing. A perfect side dish to eat your greens in a delicious way!
INGREDIENTS:
For The Salad:
4 Cups Kale, Stems Removed, Roughly Chopped
4 Cups Romaine, Roughly Chopped
1/2 Cup Sliced Almonds
1/2 Cup Dried Cranberries
For The Dressing:
3.5 Tbsp Balsamic Vinegar
2.5 Tbsp The Butternut Co. Unsweetened Cashew Butter
1.5 Tbsp Maple Syrup
1 Tsp Extra Virgin Olive Oil
1 Tsp Mustard Sauce
1–2 Tbsp Water
Salt And Pepper, To Taste
METHOD:
1. In a bowl wash your greens and let them dry.
2. Toss them with dried cranberries and almonds.
3. For the dressing, in a small bowl mix all the ingredients. Add water to get the desired consistency. Add salt and pepper to taste.
4. Pour the dressing over the salad and give it a good toss. Serve it as a side dish. Enjoy!
