Instant Pot Cashew Butter Chicken is a quick and easy recipe that’s perfect for a busy weeknight! Just throw all the ingredients in an instant pot and you have a nutritious and irresistible recipe ready to serve.
900g Chicken Breast
1 Can Full Fat Coconut Milk
1/2 Cup The Butternut Co. Cashew Butter
1/4 Cup Coconut Aminos
1/4 Cup Rice Vinegar
2 Tbsp Sesame Oil
1 Tbsp Chili Garlic Sauce
1/2 Cup Chicken Broth
3 Cloves Minced Garlic
1. Put chicken in the slow cooker.
2. Pour the liquid portion of the coconut milk into a bowl. Add cashew butter, coconut aminos, rice vinegar, sesame oil, chili garlic sauce, chicken broth, and garlic. Mix well until thoroughly combined and pour on top of the chicken.
3. Cook for 4-5 hours on low heat or until the chicken is easily shredded. Add the cream portion from the bottom of the coconut milk.
4. Serve with rice or pita bread. Garnish with cilantro. Enjoy!
