This healthy banana bread hits the right spots all across. It’s also gluten free and made without refined sugar – and fits right into one bowl!
Contributed by co-founder Ankita Kukreja, she recommends to eat it warm, with a smear of Organic Unsweetened Peanut Butter.

2 large ripe bananas
1 large egg
1 flax egg (1 tbsp flaxseed + 4 tbsp water)
1 tbsp maple syrup
4 tbsp coconut oil
1/4 tsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
3/4 cup coconut sugar or raw brown sugar
1 and 1/2 cup gluten free rolled oats
2 tbsp yogurt
Crushed walnuts (optional)

1. Mash the banana until pulpy. Stir together banana, whole egg, maple syrup and coconut oil
2. Next add the flax egg, baking soda, baking powder, cinnamon and stir till everything is combined
3. Stir in the coconut sugar and oatmeal. Mix well and last add in the yogurt and mix to combine. If using nuts add them in now
4. Pour the batter in a pan and top with sliced bananas. Sprinkle a tablespoon of coconut sugar over the top
5. Bake at 180C for about 40 mins or until a toothpick comes out clean
