With the scorching heat of summer taking over, a little effort to stock up the right kind of ingredients can easily help you pull through this hot season. A weekly stash of fresh seasonal fruits such as melons and a stock of fresh veggies will make sure your nutritional needs are sorted. A variety of add-ons such as sauces, salad dressings, fruit preserves and high protein peanut butter, among other things, can enhance your dishes further.

Here are some summer recipes that are cooling and healthy for you – 

  • Seasonal Fruit Smoothie

Whether breakfast, lunch or a snack, blend in a smoothie along with your daily meals. A yoghurt or almond milk base goes well with all sorts of summer fruits, such as mango or strawberry. To perk it up, add two generous spoons of peanut butter nutrition to it. You could try a new flavour with a new fruit every day.

  • Overnight Cold Oats

Perfect to rise to the early morning sun, a glass of overnight cold oats with fresh fruits, nuts and peanut butter is the perfect breakfast on a hot sultry day. Take a glass, fill it with layers of yoghurt, oats, chopped fresh fruits such as mango, muskmelon, strawberry, peanut butter and nuts. Let it cool in the fridge through the night. And presto! You have a combo of power foods and palatable flavours to kick-start your day! 

  • Chocolate Ice Cream With Fresh Fruits

Make sure you have ice cream on your grocery shopping list when you hit the super-market in summer. A variety of ice cream flavours can make your evening snack time delectable. Indulge in a scoop of chocolate ice cream with chopped fresh fruits, and these hot summer afternoons couldn’t get any better than that!

Tip: Add a dollop of natural peanut butter to the ice cream for added texture and a delish flavour. 

  • Savoury Fruit Crackers

Everything you want from a summer dish is here: chilled fruits, juicy flavours, creamy texture and quick-to-make. Stock up crackers from your favourite bakery or put on your baking gloves at home. Crackers can be delightful and interesting, depending on what you do with them and how you have them. Ever tried a combination of fruit and crackers? Take about 5-6 crackers. Spread a layer of healthy peanut butter on them. Chop an assortment of fresh seasonal fruits and sprinkle on the crackers. Chill the crackers in the fridge for about 20 mins and enjoy the savoury flavours.

  • Black Bean Salad

A cool and refreshing salad would be a welcome dish to combat the heat wave. And make the salad more than just chopped veggies, by enhancing its nutritional value at the same time. Soak dried black beans overnight. Boil them for about 10 mins. Now, chop some fresh veggies – radish, green onion, tomatoes, lettuce, bell peppers, mint leaves, beetroot, and any other veggies that you like. Here’s a hint: to add a tangy surprise, add a few slices of fresh orange. Mix all the ingredients in a big bowl, sprinkle salt and pepper, then add a spoon of your favourite salad dressing to it. Chill it in the fridge for a while and enjoy your cold salad.
