GREEK SALAD WITH CREAMY NUT BUTTER DRESSING
A light and crisp classic Greek Salad always hits the spot. The creamy nut butter dressing adds an exciting twist, and also fat and protein that will help keep you full!
For the salad:
1 large Green Pepper
1 large Tomato
1 head Romaine Lettuce
Green and Black Olives
For the dressing:
2 tbsp lemon juice
1 tsp mustard
2 cloves garlic, finely chopped
3 tbsp Olive oil
½ tsp oregano
Salt & Pepper to taste
1. Chop the Onion, Cucumber, Peppers, and Tomato. Refrigerate to keep them chilled.
2. In a bowl combine all the salad ingredients together, except the feta cheese.
3. For the dressing – blend all the ingredients together until combined.
4. Pour the dressing over the salad and crumble the cheese over the top.
5. Serve chilled. Enjoy!
