FLUFFY CHOCOLATE CHIP MUFFINS

 

These one bowl muffins are quick to whip up and popular with family and friends. The base is vegan, oil free and also contains no refined sugar.

Ingredients 
2 ripe bananas, mashed
2 flax eggs
1/2 cup almond milk
1/4 cup coconut sugar
1/2 cup nut butter – a blend of unsweetened hazelnut butter and almond butter was used here
2 tsp baking powder
3/4 cup all purpose flour
Add ins: Chocolate chips
.
Method 
1. Whisk together all the wet ingredients and coconut sugar
2. Add in the flour and baking powder. Mix until well combined
3. Pour into a greased or lined muffin tin. Bake at 175 for 30-35 mins

4.Serve warm. Enjoy!
