We know it’s tough to organise healthy meals with an already busy chore filled day. Which is why dinners that require minimal prep time are on top of our list. With a well stocked refrigerator and just a little bit of pre-prep done, this vegetarian, protein packed wholesome meal ticks all the boxes

Ingredients: (for 1 bowl)

For the falafel bowl

4-5 baked falafels

1 cup brown rice, cooked

½ cup red and yellow cherry tomatoes, sliced

½ cup pumpkin, cubed and roasted

1.5 cups baby spinach

Feta cheese

For the dressing:

1 tbsp soy sauce

1.5 tbsp The ButternutCo Unsweetened Almond Butter, Creamy

½ tsp spicy chilli sauce

1 tbsp maple syrup

1 tbsp water

Salt, to taste


1.    Combine all the ingredients for the dressing and blend them on high speed until smooth. Refrigerate.

2.    In a serving bowl, add rice as a base and layer the remaining vegetables on top as shown.

3.    When ready to eat. Crumble some feta cheese over the bowl and generously drizzle the dressing. Enjoy!
