Date Cake:

1.5 cup roughly chopped dates

1 1/4 cup all-purpose flour

1.5 cup hot boiling water

1.5 tsp baking soda

1.5 tsp baking powder

1/4 cup coconut sugar

2 eggs

4 tbsp room temperature unsalted butter

1 pinch of salt

Peanut Butter Toffee Sauce:

1/4 cup brown sugar

1/2 cup cream or milk

1 tbsp butter

1/4 cup The Butternut Co. Unsweetened Peanut butter, creamy

  1. Preheat the oven to 180C. Grease and lightly flour a loaf pan (We used an 8.5 X 4.5 X 2.5)
  2. Put chopped dates in a bowl and add hot water and baking soda. Let the date mixture sit for 12 minutes
  3. Once dates have softened briefly grind the mixture in a blender until a chunky mixture is formed
  4. In a separate bowl with an electric mixer, beat sugar and butter until creamy
  5. Add eggs one at a time until incorporated then slowly add the flour and baking powder until batter is mixed
  6. Add the date mixture to your batter with a wooden spoon and mix well
  7. Transfer the batter to your loaf pan and bake for approximately 40 minutes.
  8. Slightly cool cake before removing from pan

For the Peanut Butter Toffee Sauce:

  1. Add butter and sugar to a pan on medium heat, continuously stir using a rubber spatula
  2. Incorporate the milk/cream while stirring this should take about 2 minutes
  3. Turn off the gas and slowly add the peanut butter while stirring until your creamy toffee sauce is read

Pour the sauce on the cake, spread with a butter knife and enjoy 🙂

Pro Tip: To remove the baked cake flip the cake pan upside down on a flat surface once it has cooled
