DAIRY FREE SALTED CARAMEL VEGAN ICE CREAM

WE LOVE ICE CREAM – and to find a delicious and creamy, but also healthy ice cream is a rare thing. Which is why we went out and found one which can easily be made at home. It’s made with No Refined Sugar and is also Dairy Free – win win!

Tip: Make the recipe vegan by substituting honey with maple syrup.

DAIRY FREE SALTED CARAMEL VEGAN ICE CREAM

Ingredients :

2 cans (approx. 600-800ml) coconut milk, full fat

½ cup The Butternut Co. Unsweetened Peanut Butter, Creamy

½ cup honey

1 tsp vanilla extract

¼ tsp fine sea salt

Method :

    1. Combine the coconut milk, peanut butter, vanilla and sea salt over heat. Bring to a boil while stirring constantly. Continue mixing until mixture is homogeneous.
    1. Cool the mixture to room temperature and refrigerate.
    1. Once chilled, whisk the mixture well and transfer to an ice cream maker.
    1.   Follow ice cream maker instructions until ready. Pour the ice cream mix into a large bowl and freeze overnight.
  1. Serve chilled. Enjoy!
