WE LOVE ICE CREAM – and to find a delicious and creamy, but also healthy ice cream is a rare thing. Which is why we went out and found one which can easily be made at home. It’s made with No Refined Sugar and is also Dairy Free – win win!
Tip: Make the recipe vegan by substituting honey with maple syrup.

DAIRY FREE SALTED CARAMEL VEGAN ICE CREAM
Ingredients :
2 cans (approx. 600-800ml) coconut milk, full fat
½ cup The Butternut Co. Unsweetened Peanut Butter, Creamy
½ cup honey
1 tsp vanilla extract
¼ tsp fine sea salt
Method :
- Combine the coconut milk, peanut butter, vanilla and sea salt over heat. Bring to a boil while stirring constantly. Continue mixing until mixture is homogeneous.
- Cool the mixture to room temperature and refrigerate.
- Once chilled, whisk the mixture well and transfer to an ice cream maker.
- Follow ice cream maker instructions until ready. Pour the ice cream mix into a large bowl and freeze overnight.
- Serve chilled. Enjoy!
