340g Pasta, of choice
⅔ Cup The Butternut Co. Tahini
1 Cup Sundried Tomatoes
2 cups Vegetable Broth
2 Tbsp Olive Oil
4-5 Large Cloves of Garlic
1-2 Tbsp Lemon Juice
½ Tsp Chili Flakes
Salt, Pepper To Taste
1. Cook the pasta in salted boiling water. Drain the pasta and empty the pot for further use.
2. Chop the onion roughly and add to the pan with oil. Saute for 5 minutes, add garlic and saute for 2-3 minutes more.
3. Transfer the onion/garlic mixture and all remaining ingredients into a blender and blend until smooth. Add 1 ½ cup of broth and add more if needed. The sauce will thicken when it cooks with the pasta.
4. Taste and adjust flavors, salt, and pepper. Mix the sauce and cooked pasta and let simmer for a few minutes to allow the flavors to blend. Top with fresh basil and pepper flakes. Enjoy!
