These Chocolate Avocado Pudding Truffles are so creamy, people won’t even know it’s made of avocados. Oh and, they are absolutely vegan. Dig in!
3 Ripe Avocados
3–4 Tbsp Maple Syrup
1/4 Cup The Butternut Co. Unsweetened Peanut Butter Creamy
1 Tsp Vanilla Extract
1 Cup Cacao/Cocoa Powder
1/2 Tsp Salt
1 Tsp Instant Coffee/Espresso Powder (Optional)
1. Scoop the avocados into a food processor. Add maple syrup, peanut butter, and vanilla. Process until smooth and no lumps remain.
2. Add 1/2 cup cacao powder, salt, and instant coffee. Process again until combined. Freeze until firm enough to roll for 2-3 hours.
3. Blend or finely chop pistachios and coconut together. Roll the avocado and chocolate mixture into balls.
4. Coat them in cocoa powder. Keep them in the refrigerator to keep them fresh. Enjoy!
