In our quest for healthier desserts, here’s what we came up with! This CASHEW BUTTER ROSE BARFI is a refined sugar-free, rich and flavourful barfi dessert perfect for an intimate Diwali evening. The richness of cashew butter is enhanced by the aroma of the rose petals with the sweet potato adding its own goodness making it #BetterForYou!


3 tbsp cashew butter, unsweetened

35g honey or maple syrup

1 tbsp rose petals (food-grade)

150g coconut flour

200g cooked sweet potato (cooled)*

3 tbsp pistachios, roughly chopped (unsalted, shelled)


1.Mix the cashew butter and honey/maple syrup in a large bowl to make a paste.

2.Add the rose petals, pistachios and coconut flour.

3.Add the sweet potato to make a dough-like texture. Add little water to make it moldable if required.

4.Transfer the mixture to a 1/2kg loaf tin lined with baking paper and press it into the tin, flattening out the surface

5.Chill the mixture in the fridge for 30 min.

6.Remove and cut into squares.

7.Garnish with chopped pistachios.Enjoy!
