These No-Bake Cashew Butter Chocolate Protein Bars are the best post-workout treat or just a satisfying snack. Did we mention they are vegan & gluten-free?

1/2 Cup The Butternut Co. Cashew Butter
2 Tbsp Coconut Oil
1/4 Cup Honey
1 Tsp Vanilla Extract
2/3 Cup Of Your Favourite Chocolate Protein Powder OR ½ Cup Vanilla Protein Powder + 2 Tbsp Cacao Powder
2/3 Cup Gluten-Free Rolled Oats
1 Tbsp Chia Seeds
For The Topping:
3 Tbsp Chocolate Chips
1 Tsp Coconut Oil
Fancy Sea Salt To Sprinkle On Top
Handful Of Cashews

1. Add cashew butter, coconut oil, honey, and vanilla in a saucepan over very low heat.
2. Turn off heat, stir in your protein powder until smooth, further folding in oats and chia seeds. Pour in an 8×4” loaf pan lined with parchment paper.
3. Add chocolate chips and coconut oil in a saucepan placed over low heat until it melts. Drizzle over the top of the bar evenly. Garnish with cashews and pour chocolate again. Sprinkle with sea salt.
4. Refrigerate for 1 hour, remove from loaf pan and cut into squares. Store in an airtight container inside the fridge and devour it. Enjoy!
