BRUSCHETTA THREE WAYS

Valentine’s Day is around the corner and what better way to treat your man or woman than with a warm home cooked meal.

Menu setting isn’t easy either. Which is why we’ve curated a special three-course Italian meal to make your V-Day meal planning a whole lot easier!

COURSE 1: Appetizer

Ingredients

1 cup cherry tomatoes
1 cucumber, cut into thin strips
1 radish, thinly sliced
1 avocado, mashed
Rocket leaves, for garnish
2 cloves garlic
¼ cup balsamic vinegar
¾ cup extra virgin olive oil
1 tbsp The Butternut Co Cashew Butter Unsweetened
2 tbsp lemon juice
Salt and Pepper, to taste
Thick baguette, sliced into pieces

METHOD

1. In a bowl, mix the balsamic vinegar, half the olive oil, salt and pepper. Chop and cook garlic in oil in a pan, and add the garlic to the mix as well.
2. Slice the tomatoes in half and marinate in the balsamic mixture.
3. In a separate bowl whisk the lemon juice, cashew butter, remaining olive oil, and salt and pepper.
4. When it’s time to serve,
Option1: Pair bread with the marinated cherry tomatoes. Garnish with salt and pepper.
Option2: Spread mashed avocado on bread, top with sliced cucumber and drizzle cashew butter sauce. Garnish with salt and pepper and rocket leaves.
Option3: Spread mashed avocado on bread, top with sliced radish. Drizzle balsamic vinegar mix. Garnish with salt and pepper.
5. Serve fresh and get ready for course 2. Enjoy!
