Some days you need dessert for breakfast. On those days I make this healthy and delicious Baked Oatmeal and enjoy a slice (or sometimes two!) for breakfast. It’s warm and aromatic and best enjoyed with lots of almond butter and a hot cup of tea.
The best part – It’s made without refined sugar. There’s a tiny bit of brown sugar that goes into the crumble layer, for me this gives a lovely caramel glaze to the crumble but you can always replace it with jaggery or coconut sugar.
This is also gluten free, made with whole oats and real fruit – and can easily replace your bowl of breakfast oats!
For the base layer:
2 cups rolled oats
1 cup nut milk
2 large ripe bananas, mashed
4 tbsp honey
1-1.5 large apples, sliced thin
For the top crumble layer:
3/4 cup oat flour
1/4 cup quick or rolled oats
1/4 cup coconut sugar
2 tbsp brown sugar
4 tbsp coconut oil
Let’s make it
In a large bowl combine the oats and milk and set aside to soak for 10mins.
Add in the mashed bananas and honey and mix well.
Keep the apple for assembling later.
Let’s prep the crumble
Combine all the dry ingredients.
Last add the oil and toss so everything is evenly combined
Time to assemble
Preheat your oven to 180C
Evenly press the oatmeal base into a greased wide bottom pan.
Next, add a layer of sliced apples. Press down.
Cover the apples with the crumble topping generously. Even out and press down.
Bake for 45 mins at 180C until the top is a light golden brown.
Let cool. Slice. Top with almond butter. Enjoy!
