AVOCADO SALAD WITH PEANUT VINAIGRETTE

If you’re nuts about avocados and love experimenting, this fresh & happy AVOCADO SALAD WITH PEANUT VINAIGRETTE is a perfectly satisfying yet light meal in itself. The avocados add their share of healthy fats and dietary fiber while the refined sugar free peanut butter packs in the right amount of protein to fill you up!

INGREDIENTS:
2 avocados thinly sliced
2 carrots spiralized
2 green onions thinly sliced
1 red bell pepper diced
1 jalapeño pepper thinly sliced
3 tablespoons chopped fresh cilantro
3 tablespoons chopped peanuts
1 tablespoon sesame seeds

For Peanut Butter Vinaigrette
1/4 cup rice wine vinegar
3 tbsp creamy peanut butter
3 tbsp lime juice (freshly squeezed)
2 tsp honey
1 garlic clove minced
1/2 tsp toasted sesame oil
1/4 cup grapeseed oil
Pinch of salt and pepper

METHOD:
Peanut Butter Vinaigrette
1.Mix vinegar, peanut butter, lime juice, honey, garlic and sesame oil.
2.Add grapeseed oil and some salt and pepper.
3.Whisk until smooth

ASSEMBLY:
1. Layer the avocados, carrots, green onions, mango, red bell pepper and jalapeño on a plate.
2. Drizzle the peanut butter vinaigrette.
3. Garnish with cilantro, peanuts, and sesame seeds. Enjoy!
