We are completely obsessed with this Almond Butter Stuffed French Toast. This is healthier and loaded with healthy fats and protein.

INGREDIENTS
- 4 slices of whole-grain bread
- 1/2–1 banana, thinly sliced
- 2–3 Tbsp The Butternut Co. Almond Butter
- ¼ cup unsweetened vanilla almond milk
- 1 egg * ½ tsp vanilla
- ½ tsp cinnamon
- ⅛ tsp sea salt
- coconut oil
- maple syrup and fresh berries, for topping
METHOD:
- Spread about 1/2 tbsp almond butter on each bread and make sandwiches with banana slices in between them.
- Whisk together almond milk, egg, vanilla, cinnamon, and salt and pour in a container large enough to soak the sandwiches. One at a time, soak sandwiches on both sides for about 10 seconds or until they are nice and moist
- Pre-heat a non-stick skillet on medium-high heat. Pour a little coconut oil so that the sandwich doesn’t stick
- Place the sandwich in the pan and cook for 4-5 minutes until the bottom side is golden brown. Flip sandwich, press on the sandwich with your spatula, and cook until golden brown. 5. Cut each sandwich in the desired shape and size and serve with fresh berries and a drizzle of maple syrup
