ALMOND BUTTER CUPCAKES WITH VANILLA BUTTERCREAM FROSTING

Ingredients – for the cupcakes :

1/2 cup brown sugar

1 egg

1 tbsp oil, of choice

1 tsp vanilla extract

1 cup flour

1.5 tsp baking powder

1/2 cup milk

1/4 cup The Butternut Co Unsweetened Almond Butter

Ingredients – for the buttercream frosting :

1/4 cup butter, room temperature

2 tbsp The Butternut Co Unsweetened Almond Butter

1 tsp vanilla extract
Pinch of salt
2 cups icing sugar
2 tbsp milk

METHOD :
1. In a large mixing bowl, beat together – sugar, egg, oil and vanilla extract.

2. In a separate bowl mix the flour and baking powder. Add this mix to the wet mix along with milk and mix until combined

3. Stir in the Almond Butter and mix the batter until smooth.

4. Pour into a lined muffin tin and bake at 180C for 12-15 minutes or until fully cooked. Let them cool.

5.For the buttercream –

In a bowl, beat together the butter, vanilla extract, Almond Butter and salt until smooth. Add in the icing sugar and milk, while beating well. If frosting is too soft or stiff, add more powdered sugar or milk until spreadable.

6. Pipe onto the cooled cupcakes. Enjoy!
